I typically go at 8-10pm just because that's when I feel like going.

But it's not always busy in prime hours like after a typical work day, you just have to find the right gym. Some less known ones will only have a few people in them. I actually go to Anytime Fitness which is popular and it's almost dead at 5-6pm.

So to answer your question, yeah I would. Why not?

Also evildevil is correct, diet is very important, you'd be wasting your time by trying to gain muscle lifting and eating sub optimal calories without enough protein. Just like you'd be wasting your time trying to lose fat eating above your maintenance calories even if you workout 2 hours a day. Calories matter for weight loss or gain. The macronutrients in those calories matter for composition. It's a little more complex but that's the majority of it.
